Entry 1 : Jalapeno Cheese Muffins

 This recipes makes 6 medium sized muffins.


INGREDIENTS:
  • All purpose flour\Maida : 1 cup
  • Sugar: 1/2 tablespoon
  • Baking powder : 1/2tablespoon
  • Baking soda : 1/4th teaspoon
  • Salt: 1/4th teaspoon
  • Unsalted butter : 1/4th cup(melted)
  • Yogurt : 1/2 cup
  • Egg: 1
  • Minced onion: 1 tablespoon
  • Chopped Jalapeno pepper :1(or more as per spicelevel)
  • Grated Cheddar Cheese : 1/2 cup
Procedure:
  • Mix together maida, sugar, baking powder,baking soda, chopped onion thoroughly. Add cheddar cheese and give a quick mix.
  • In another bowl,add beaten egg, melted butter, yogurt,chopped green chilies and mix well.
  • Slowly add egg mixture to dry ingredients and mix together.
  • Line in muffin pan with baking paper cups, fill the cups with batter.
  • Turn on the oven to 400F.Bake muffins for 15-20 min. 
Cool them and serve.

Entry 2 : Baked Nippattu

Ingredients:
  • 2 cups of maida (All purpose flour) 
  • 1/4 cup water (warm) 
  • 4 tsp sesame seeds 
  • 1/3 cup oil 4 Tbsp butter (melted) 
  • 1 big onion(finely chopped) 
  • 1 tsp baking soda 
  • 3 green chillies (finely chopped) chopped 
  • coriander leaves
  • 1 tsp Salt
  • Chilli powder(optional) 

Preparation:
  • Take a bowl add 2cups maida, onions, green chillies, salt, soda, sesame seeds..Add oil and mix well..then add butter as well.. add warm water to the dough.. 
  • Mix well and cover this with a cloth..keep it aside for 30mins. Pre-heat the oven to 325F.Take a big plate apply grease to the plate. Take a dough divide into balls..flatten the balls as much you can then bake for about 25-30min until they are brown.

Entry 3 - Fenugreek Parmesan Shortbread Rounds

Prep Time – 50min (includes freezing time 30 min)
Baking time – 20-25min
Yield – 17 cookies

Ingredients:
¾ cup whole wheat flour
¼ cup besan
¼ cup dried fenugreek leaves
½ cup butter (softened)
½ cup parmesan cheese
½ teaspoon chilli powder
¼ teaspoon salt

Procedure:
Line a baking tray with parchment paper.

In a cold mixing bowl (refrigerate the bowl) mix butter, salt, parmesan cheese and chilli powder until creamy. Add the flours, dried fenugreek leaves to the mixture and continue mixing. Mix till it is of chapathi dough consistency. Add cold water if needed. On a floured surface roll the dough into a ball and then into a round log of desired thickness. Try to make the log even and wrap in aluminum foil and freeze for 30 minutes. Preheat oven to 350ºF.

Remove the log from the freezer and cut into 1 cm thick rounds. Arrange on the baking sheet with a little space between them. Bake for 20-25 minutes or until golden brown around the edges. Remove from the oven and let them cool completely before serving.

Entry 4 : Onion Crackers

Ingredients:
1.5 cups wheat flour(i used rice cooker cup)
1/2 cup rice flour(crispiness)
1/4 cup water
1/2 cup oil
1/2 big onion(chopped finely)
2 green chillies(finely chopped)
1 tsp jeera
1/2 cup cilantro(finely chopped)
1 tsp salt
Method:
  • Preheat oven to 400 F
  • In a bowl mix all the above ingrdients except oil and mix well.
  • Add oil little at a time and knead the above dough.
  • Make small balls and flatten them in any shape(i made them round).Makes approx.15.
  • Bake for 20 mins or till golden brown.Do not overcook as the onions become bitter.
  • Kids love them and a good tea time snack.

Entry 5 : Spicy Cumin and Garlic Mini Buns.

What we need:

All purpose flour 2cups
Wheat flour 1cup
Water 1 cup
Crushed roasted cumin 1 sp
Crushed Garlic flakes 1sp
Chili flakes 1sp
Unsalted butter 1tbs
Salt 1sp
Sugar 1/2 sp
Oil 1sptiv
Dry Active yeast 2sp
Garlic powder  1/2sp


Method:

  • Luke warm water and add butter, sugar, oil and yeast and leave it aside for 10mits or till the mixture becomes frosty.
  • Now add salt, wheat flour, all purpose flour and crushed cumin.
  • Mix well and make a soft dough. If needed add little water.
  • Kneed well and cover with plastic wrap.
  • Keep aside for 2 hrs ot till the dough becomes double the size.
  • Remove and kneed for a minute and make the dough into 8 equal portions and .
  • On a greased tray place each  ball atleast 2 inches far from the other.
  • Preheat oven on 400 degrees F.
  • Bake these buns for 10 minutes and remove.
  • Apply little butter on top of each bun and sprinkle little garlic powder on top.
  • Further bake the buns for another 15 minutes.
  • Remove and let them rest for 30minutes.
  • Serve with a cup of hot coffee.

Entry 6 : Vegetable Frittata

Ingredients :
1 small onion, thinly sliced
1 small cucumbet [i used persian cucumber; zuccini can also be used]
2 green chillies finely chopped
1/2 cup sliced mushrooms [fresh or dried]
few beans, finely chopped
1/2 carrot thinly sliced
6 bok choy florets  nicely chopped
1 tablespoon butter
8 egg whites
1/2 cup milk
1/4 tsp salt
1/8 tsp pepper
small amount of Maggi Hot and Sweet sauce


Preparation :
  • Pre-heat oven for 400 degrees F.
  • Spread butter inside [all around] 8 inch pan.
  • Place onion, green chillies,cucumber, mushrooms, beans, carrots, bok choy in 8 inch pan. [Arrange one by one as shown in the pics]
  • Cook the vegetables in oven for 3-5 mins or until they become half crunchy, half baked.
  • Now, in a bowl, beat eggs, pour milk, add salt, pepper, hot & sweet sauce, whist altogether until the mixture is little bit fluffy with bubbles.
  • Pour the mixture on to the vegetables evenly.
  • Let it cook for 25 to 35 minutes.
  • For checking, poke with a fork in the middle and see if the fork come out clearly without food sticking to it. That is the right consistency of baking.
  • Once it is well cooked, take out of oven and let it cool down for couple of minutes, slice it into pieces, and serve it hot with oranges on the side :)   [don't forget to switch off the oven ;) ]

Entry 7 : Savory Oatmeal muffins

Ingredients:

Quaker oats (Quick 1 minute) -1 cup
rice flour -1/4 cup
yogurt - 1/4 cup
Mint chutney(Fresh mint+green chilis+salt) -1tsp
Cumin seeds- 1tsp
Cilantro -Half Bunch(acc to taste)
salt - to taste
water- to bind together to a thick vada consistency

Procedure:

  • Mix all the listed ingredients together and let it sit for 15mins until the oatmeal is soft and the batter looks like vada batter .
  • Preheat Oven to 350 degrees Fahrenheit.
  • Spray olive oil PAM in a muffin pan and pour the batter in to the muffin cup (pour only 3/4th ) and Once the oven is ready bake them for 15mins and take them out and turn them over. They don't stick so its easy to take a spoon and turn them over.
  • Let them bake for another 15mins and turn off the oven and let them sit on the oven rack for another 10mins to allow them to cool.
  • Take them out, do the presentation(mint chutney homemade) and serve.

Entry 8 : Savory treats

Savory treats ..You can serve them as Appetizers( with salads) or afternoon snack or as  light sweet snack after dinner.
Ingredients :
Flour 250gms
Fresh Cheese 80 gms
Baking powder  2 tspn
Butter  125 gms
Chilly flakes  2 tspn
Sesame seeds 1 tbspn
Salt  according to taste

Toppings:
   Sweet Topping:
   Fresh cheese 1 tbsp
   Honey I tsp
   Almonds  2
   Dark chocolate flakes 1 tsp

 Savory topping :
   Quark  1 tbsp
    Tomato  1
    Lettuce  1 tbsp
    Cheese  1 slice

Procedure : 
  •  Preheat the oven at 180°c.
  •  Knead all the ingredients together  except sesame seed  and let the dough rest for 30 mins.
     Divide the dough into small balls.
  • Roll the ball into desired shape  with a rolling pin   and sprinkle sesame seeds, if u want to make it more spicy  sprinkle few chilly flakes too.
  • Arrange all  in tray and bake for 10-12 mins. 
  • Make toppings according to ur mood or wish 
  • For sweet topping  drop a tspn of fresh cheese on the backed base , then put a tspn of honey and few flakes of almonds or grated chocolate . It tastes great when base has good amount of chillies in it.
  • For appetizer,  take a lettuce leaf, cut it in thin stripes and tomatoes ( chopped) , a cheese slice on top.

The yummy treats r ready in no minutes.
